University of Texas at San Antonio (UTSA) Roadrunners (San Antonio, TX): Seven-Layer Dip
In honor of the Super Bowl, we decided to make 7-layer dip, perhaps the most classic Super Bowl snack (do people eat 7-layer dip on other days?). But 7-layer dip is also a classic Tex-Mex dish, so it’s a fitting culinary representation of a school that is located close to the U.S.-Mexico border (though it seems unlikely this would appear on many menus in Ciudad Juarez).
Can the Roadrunners storm the Alamo and make it in March Madness?
Seven-Layer Dip
1 can of refried beans
16 ozs. sour cream
taco seasoning
2 cups grated cheddar cheese
1 cup guacamole (avocados, tomato, red onion, cilantro and lime juice)
1 cup salsa
1/2 cup chopped green onions
1/2 cup chopped tomatoes
Layer ingredients in glass bowl: 1) refried beans; 2) sour cream (mixed with taco seasoning); 3) cheese; 4) guacamole; 5) salsa; 6) green onions; and 7) tomatoes. Chill before serving and serve with tortilla chips.
